This cilantro lime cauliflower rice is the perfect complement to any Mexican dish! The best part, it only takes about 5 minutes to make, is SUPER healthy, easy to assemble and gluten free, low carb, vegan, paleo and freaking delicious.
I have been obsessed with cilantro lime rice since I had my first bowl of Chipotle. I’m sure I’m not alone in my Chipotle love 🙂 But I’ve been trying to make more of my meals at home, and have been eating more and more cauliflower rice ever since I discovered that Trader Joe’s now sells cauliflower rice in their frozen food section. I’m obsessed. I can’t help myself, it’s so good, super filling and there is not one part of me that misses the rice!
We have been more focused on eating more veggies thoughout the day and using cauliflower as rice is just such an easy hack! I made cauliflower pizza this weekend with a big head of cauliflower and it only took about 4 minutes to make that entire head of cauliflower into rice using my tiny food processor. So if you don’t have a Trader Joe’s in your area or they are sold out, don’t fret! You can still enjoy this dish and it will still be ready in under 10 minutes! Score.
If you haven’t started using cauliflower rice, give this easy recipe a try. I promise no one will know it’s a veggie (just don’t tell them), especially if you are serving this as the base of a Mexican dish, like burritos or Mexican Chopped Salad or a Homemade Burrito Bowl. May I suggest that you serve this with Simple Corn Homemade Salsa or with these easy Mexican Black Bean Lentil Burgers crumbled on top! I seriously love Mexican food, if I had the choice we would have Taco Tuesday 5 days a week!
Cilantro and lime add the perfect seasoning to this cauliflower rice. The lime helps cut out any of the “cauliflower” taste you might normally associate with cauliflower rice and the cilantro makes it authentically Mexican. I personally love using Seasoning Salt when I cook Mexican dishes, so this recipe has just a touch. But feel free to use regular sea salt if you prefer!
Tips to make cauliflower rice at home:
Cut cauliflower into florets. Add enough cauliflower florets to cover the bottom of your food processor (don’t over crowd it). Turn on the food processor and let process until all the cauliflower has been broken down into “rice”. Dump out of food processor and repeat until all the florets have been broken down. - 1 package cauliflower rice, or 1 small cauliflower, rice
- Juice of 2 limes
- ¼ cup cilantro, chopped
- ¼-1/2 tsp. seasoned salt
- black pepper to taste
- Heat a pan to medium heat. Spray with non-stick spray (coconut oil)
- Add package of cauliflower rice and cook for 5-6 minutes.
- Take off of heat and add lime juice, chopped cilantro and season salt and black pepper (to taste)
