Who Am I?
At my core, I am a Pancake Warrior, fitness enthusiast, and recipe creator. I owned, run, and cooked for my own healthy catering company The Healthy Dish Company until I moved to Texas to begin a new journey of running my own gym, Burn Boot Camp. I believe a workout can turn around a day, so I try not to miss them! I eat a mostly fresh foods vegetarian diet because of all the craziness that goes into foods now-adays. I have a passion for creating healthy nutritious recipes that are never boring or bland. I read cookbooks like novels and have watched more hours of Food Network and Julia Child than I’d like to admit. I love Pancakes… and granola…. and pumpkin cookies! Apparently I’m a bit of a sweet tooth :). This is why I always make these things healthy (check out my recipes).
Dave and I start every weekend with protein pancakes. This fuels our workouts on the weekend and allows me to enjoy cooking a healthy breakfast. We approach fitness like we are preparing for battle: we want to be strong, nimble, agile, and fast; like warriors. Hence the name PancakeWarriors. I hope to motivate you to join me in becoming your own warrior by providing you workouts and healthy recipes that fuel the body.
I am on a journey to be happy and healthy! I was always overweight as a child. I remember being in preschool and being told to finish all my food. By kindergarten, I was trained to EAT ALL THE FOOD; and I did. I have done all sorts of diets and weight loss challenges and have always been successful. But afterwords I just gain the weight right back. While dieting I developed a nasty habit of binge eating. I would eat nonstop, past discomfort after days of restrictive eating. This unfortunately followed me into non-dieting times. I’ve been able to tame my hunger beast that has led my to binge eating and break the dieting mentality through proper nutrition and want to share everything I’ve learned with anyone who is in the same struggle as me! Check out my Back to Basics Nutrition course if you want to learn more!
The most helpful for me, is that I no longer have a restrictive mindset. I focus on eating healthy, clean, and wholesome foods with little chemicals, additives, or artificial ingredients. This means I stay away from fast foods, boxed foods which are usually heavily processed, and I focus on fresh. I believe that nutrition is the core of health, fitness, and feeling good. I truly believe that most people want to eat healthy but just don’t know how to go about doing that. That’s one of the reasons I’ve recently become a nutrition coach and fitness chef. Eating right is so much easier and less time consuming when you know what you’re doing! If you’re interested in healthy weekly meal plans, please grab one for free!
Fitness is a significant part of my life. I started lifting weights while taking my first body pump classes. Prior to that, I had done mostly cardio and home workouts. I was always so motivated by how much stronger I was getting when lifting weights. Body pump was a natural jumping off point to my now love affair with the weight room.
In college I was a barista. I’ve always said if I won the lottery that is what I would do! After college, I became an accountant but I just didn’t have the passion for it like I do fitness and nutrition. I enjoy helping and teaching people to not only look better but to also feel better. Confidence is the key, and when we feel good, we look good! Food truly is the best medicine. I love helping people realize their potential and showing them that eating healthy doesn’t have to be restrictive or bland. I’ve taught group exercise classes from Zumba to boot camp, cycling, and athletic conditioning. I’m currently a trainer at Burn Boot Camp of Charlotte. I still get a big smile when I think about the huge progress over 6 weeks where ladies would often be doing 20-30 pushups on their toes after not being able to do any at the beginning. So awesome!
I hope you enjoy PancakeWarriors and get enthusiastic about a healthy lifestyle!
