An added benefit is that because this is a single serve portion you can add whatever you’d like maybe add pecans to one and blueberries and blackberries in another; or you get really crazy and you add chocolate and strawberries instead of blueberries. Now you see why I love this recipe, it’s so versatile!
Growing up we always had banana bread, it was the treat that I think I cherished the most. Banana bread was one of my mom’s favorite ways to make us something sweet but not too overwhelming. I usually ate more than I probably should have. I’ve always had a little bit of a problem with portion control, so the single serve blueberry banana bread is my solution to over snacking!
Don’t skip the protein! Protein is an essential part of your diet. It’s the building block of the human body! It helps in the building of everything from your blood to your organs to you hair!
Protein keeps you full longer. This is because protein it takes longer to digest. This also means it takes more calories to digest protein helping you burn calories while you eat – which means I can have seconds! Ok maybe not but you get the point! Don’t skip on the protein!
This recipe can be mixed by hand in a big bowl with a large spoon and some elbow grease. The hardest part of this recipe is not eating the batter while you are mixing it up! Since these are vegan, you don’t have to worry about eating the dough!
So you don’t have to dirty two dishes, always make my flax egg in the large bowl then mix the rest of the ingredients. Make sure you let this sit for 5 minutes before adding the other ingredients though.
Glass ramekins (affiliate link) are great – they are affordable and have so many uses. You can bake this single serve banana bread, or this single serve brownie in them. You can also store freshly cut veggies or berries, since they come with a very tight fitting lid!
- 2 bananas, mashed
- 2 scoops cinnamon protein powder
- 1 tsp. cinnamon
- 2 tbs. cashew meal
- 1 flax egg (1 tbs. flax, 3 tbs. water)
- ½ tsp. baking powder
- pinch salt
- ¼ cup blueberries
- Preheat oven to 375F.
- In a large bowl make flax egg by combining 1 tbs. ground flax seed with 3 tbs. water. Let sit 5 minutes.
- Mash bananas the large bowl. Add protein powder and combine, Add cinnamon and cashew meal. Mix to combine
- Add baking powder and small pinch of salt. Fully incorporate baking powder into banana mixture.
- Stir in blueberries (frozen is fine).
- Spray 2 single serve ramekin with nonstick spray. Divide the batter between ramekins.
- Bake at 375 for 20-25 minutes.
