Happy Wednesday y’all. Thank goodness the week seems to be flying by. What about you?! I’m really getting the fall vibe here in NC and couldn’t be more excited. My WIAW eats definitely reflect the fall season. Roasted everything!! Apple chips, pumpkin – what!!!
Ok, so I have to admit that I’m not 100% on a new food routine yet. I’m still devouring my green smoothies every morning. I started using frozen spinach a few weeks ago. Holy easiest thing ever! I’ve officially killed a 4lb tub if raw fusion chocolate drinking a smoothie everyday (and making my own protein chocolates). Today’s smoothie was blackberry, banana, spinach, almond milk, and chia seeds. Pretty simple, but so good!
The show was stolen by my pumpkin applesauce protein muffin – talk about everything fall flavored! Don’t let “muffin” trick you. This was made in the microwave in a cereal bowl. Holy amazing treat. I’ll share the recipe soon, still working on the final recipe. I made this for dinner Monday night and immediately made another because I had to make sure the first version wasn’t a fluke!
Lunch was pretty epic. I decided to roast the lone beet in my fridge and it was everything I could ask for! Why are the simplest things often the best?? Roasted beets, balsamic, and goat cheese is probably my favorite dish. However, I know better and made a giant salad with protein because I had high intensity cardio at lunch and was going to lift with Dave later that night. So I made a kale salad, salmon cooked with lemon and fresh dill, roasted: BRUSSELS SPROUTS, cauliflower, artichokes, grapes and these beautiful beets. I added some raw yellow pepper and red onion because I wanted a crunch. So good.
Snacks today were all things I crave while sitting at my desk at work – sweet and full of caffeine. Let’s start with the sweet. Apple chips sprinkled with cinnamon. These were seriously so easy. I have no idea why I didn’t try this earlier. Now I must admit I almost called this blog post “what I burned this week” because I made beet chips (beyond burned lets call them blackened), zucchini chips (browned to crispy nastiness) and second round of zucchini chips (not as burned but inedible). But that’s neither here nor there because these apples were spot on!
Heat the oven to 275 and bake the thinly cut apples for 30 minutes. Flip apples and pay attention. I’m thinking the apples were in the oven a total of 45 minutes then I cut off the oven and just let them hang out for 10 more minutes while I was making my pumpkin muffin for the second time.
Now for the caffeine: My second snack of the day is my new coffee addiction. Cold coffee, almond milk, and a scoop of peanut butter fudge protein powder. It’s everything I loved about my old Starbucks addiction without having to leave the office. Try it… Thank me later (I’ll take chocolates).
I snacked on some raw cashews and a handful of cinnamon puffins (I’m addicted, don’t judge me) before we went to the gym! We headed to the gym and I was able to get in a pretty good workout. There was a crazy lightening storm going on outside and I was just a little upset that I wasn’t at home with a big bowl of hot soup and a cozy blanket watching the storm. Just sayin. Buuuuuuttt I do plan on making my first batch of soup for the season soon and then I will be on with the savory food parade for the rest of the year, because well salads in the winter aren’t as fun.
I had my usual it’s 10 pm and I need dinner meal which is yogurt with a ton of fruit and puffins. I was able to enjoy this on the couch while it monsooned outside. Fun fact – I left my shoes and socks in Dave’s car and ran barefoot to his house in the pouring rain. Keepin it classy!
I had one more of these chocolate peanut butter beauties left and quickly devoured it when I finally got home.
