As a kid I remember my mom adding beets to almost every salad she would make. I would turn my nose up at here and mutter something like EEEEWW beets! Silly young food I was. Now, I will eat beets until my heart is content and my teeth are slightly pink for the rest of the day. Hey don’t judge! Beets are fantastic.
I have to confess, I haven’t added beets to my smoothies in quite some time. But Dave and I went to the Charlotte Fitness Expo and met some great ladies selling freshly pressed organic juice out of a Juice Truck. Talk about the best kind of food truck out there. And the first sample Dave got was beet, apple, ginger, and lemon. And I was in beet heaven. There is something about the combination of beets and ginger that makes me swoon! Ok for all of you with me on the beet train, I have to tell you I have made this 2 days in a row and have another big cup ready for me when I get done teaching camp in the morning. Dave asked me “How do you peel that thing” when I pulled the beets out of the bag this morning while we were filming. So in case you were wondering the same thing, my answer was get a little agressive with it. Here is is a video of how to peel and steam beets just in case you aren’t sure!
With beets steamed, you can easily go a ton of different directions. Pancakes, cookies, smoothies, salads. You name it! I love using beets for natural food coloring in red velvet dishes, I can’t wait to share with you my red velvet pancakes later this week, they are AMAZING!! And feature, well I’ll let you guess the secret ingredient 🙂
For this recipe you will need a high speed blender, chia seeds, protein powder, and raw pecans (affiliate links). You can drizzle the smoothie with coconut butter (such a great addition to a healthy kitchen, it’s like adding frosting to everything).
- 1 cup frozen spinach
- ½ medium beet, steamed and peeled
- 1 scoop vanilla protein powder
- 1 small handful pecans (2-3 tbs)
- 1 tsp. fresh ground ginger
- 1 tbs. chia seeds
- 1 cup unsweetened coconut milk
- 1 tsp. vanilla extract
- Add ingredients to a high speed blender in the order above.
- Blend on high until smooth
- Serve with optional coconut butter, pecans, chia seeds, coconut flakes.
