Today I’m gonna share with you a simple gluten-free lunchtime recipe. It’s a combination of some of my favorite summer flavors which include basil, tomatoes, and avocado. Can you say yum! All of this mixed in with protein in the form of canned tuna (or you could use chickpeas as a vegan alternative) , can you say easy peasy!! Oh and you can’t forget the best part, the raw organic wrap made from 100% vegetables. I’ll tell you more about that in a bit!
One of the hardest things for me when I was working my corporate job was to figure out what to make for lunch everyday. Especially on days when I wasn’t excited about leftovers from the night before and the idea of a salad just wasn’t cutting it. I’m sure you’ve had those days before right? Well these simple pesto avocado tuna wraps are exactly what you need for those days.
There are a few stable items I try to keep in the fridge each week, and one of those is homemade pesto. My favorite is my spinach pesto, since it’s packed with added veggies from all that spinach. You have to try this simple recipe, you are going to love it! Pesto only takes a few minutes to make and it makes just about anything taste like perfection: eggs, sandwiches, thinned out as salad dressing, on top of salmon, shrimp, or chicken, chickpeas, you name it. Oh and pesto will keep for the entire week in the fridge for quite a few days so it’s perfect to make early in the week and use it when you need it. The other things I have to have in the fridge/pantry are avocado, tuna, and chickpeas.
Tuna salad never really excited me, I’m not a big fan of mayonnaise so I thought I would never love tuna salad. However, the discovery of tuna and avocado has changed my mind forever. My nutrition clients will tell you one of my first recommendations to them is smashed avocado tuna with sliced cucumbers and red bell peppers it is the best lunch ever. These pesto avocado tuna wraps are an upgraded version, after you have had smashed avocado tuna one to many times. The pesto takes this simple lunch to a whole new level.
So one of the discoveries I want to share with you are these raw, paleo, vegan wraps (affiliate link) that are made from 100% fruits and vegetables (Apple, zucchini, onions, flax seeds, coconut, oregano, turmeric, black salt). These wraps are pliable enough to wrap up without breaking, but are hearty and super satisfying. I’m so in love. I’m ordering more today, because I’m addicted! Dave and I cut out most bread about 6-7 months ago to help him deal with his gut issues. I haven’t really missed it but lately I’ve been daydreaming about my favorite wraps from a local restaurant. - 1 can tuna in water, drained
- ½ small avocado, smashed
- 2 tbs. homemade pesto
- 5-6 cherry tomatoes, chopped
- 1 original Wrawp wraps or wrap of choice
- Handful of spinach
- Drain the tuna (or chickpeas)
- In a bowl, smash the avocado and add the drained tuna and pesto
- Add the spinach to ⅓ of the wrap. Top with the avocado tuna mixture and top with tomatoes.
- Tightly roll the wrap up and cut on a diagonal
