The crisp thin cookies are a breeze to decorate with my easy white chocolate frosting! This recipe is a must make, as it is high in protein and there are only 42 calories in each cookie! I’ve got you excited now right? Good – lets get baking!
Happy Monday Everyone! Hopefully everyone enjoyed the weekend! I know I had an amazing one. The sun finally came out on Sunday and it was a glorious 50 degrees and sunny. Hence the smoothie recipes from yesterday. It was just so nice to come home from the gym and have a smoothie. I also really enjoy having these smoothies at night – since they taste like dessert!
Speaking of dessert – what about those pear gingerbread cookies? Looking pretty good right? LoL I had to get Dave’s approach to eating the gingerbread men – do you eat the head or one of the body parts first and why? I’m sure your answer says something about the kind of person you are, but I was more just curious because well, what should you really eat first? Dave decided that if he was a gingerbread man, he would want to be one that went into the eggnog smoothie! The conversations you have making cookies!
I really enjoy my time in the kitchen, and these fun moments just add to my wonderful memories in the kitchen. I have some of the happiest memories of my childhood around the kitchen aid mixer. My mom didn’t buy store bought treats, so all of my treats were always homemade. Spoiled right? I remember sticking my finger in the bowl of the cookie dough when she wasn’t looking. Those are the memories that I cherish all the time. It was working with her since a young age that has always given me confidence in the kitchen. Watching ingredients magically transform into these delicious cookies – oh I was in heaven. I still get that way baking, it’s such a therapeutic thing for me now. I usually don’t have a recipe to follow, I just add a little of this and some of that. I’ve followed enough recipes and watch enough cooking shows to understand the basic chemistry behind baking. These gingerbread men are no different – this recipe was literally add some of this and that and then more and more protein powder and flour because they just would not roll out without sticking to everything. Hence the overflowing amount of protein powder below.
With that being said, I would encourage you to replace 2 scoops of the protein powder with another 1/2 cup of oat flour if you can’t bring yourself to use 5 scoops of protein powder. Just remember you will likely need to compensate for the missing sweetener in the protein powder and add 6-10 scoops of stevia (or 3-4 packets of whatever sweetener you like) or a few table spoons of maple syrup, depending on what you prefer!
As I promised today I am including the recipe for the Pear Gingerbread Men. They are full of protein, sweetened naturally, and the fat was replaced with pear and apple sauce. These cookies pack an intense ginger flavor, with both freshly grated ginger and ginger in powder form. If you don’t have fresh ginger, increase the dried powdered ginger to 2 tablespoons. You really want the ginger flavor to be pronounced in these cookies.
There are added health benefits to eating ginger, especially during this time of year so don’t be shy, spice those cookies up! Here are some to the benefits of ginger:
- Ginger has been said as a natural treatment to help treat migraines, nausea, stomach aches, and has the same chemical as many antacids, laxatives, and anti-gas medications. It includes chromium, magnesium and zinc which are all known to help the body improve blood flow.
- Since I was a kid, I remember ginger ale always helped my stomach settle when I was under the weather.
- Ginger has also been studied in helping reduce the muscle pain caused by exercise. Sounds like the perfect recovery cookie if I don’t say so myself!
- Ginger has been a natural treatment for colds and flu around Asia for centuries. Hello cold and flu season relief!
I have to say decorating these cookies and photographing them was probably the highlight of my weekend. Dave took over with the white chocolate frosting for a bit and was drawing crazy faces on the gingerbread men. Apparently he thought this was so funny. LoL needless to say this would be a fun project to do with your favorite girlfriend, boyfriend, husband, or kiddos. There is really no wrong way to do these and if you mess up, wash it off and restart! Or bite it’s head off and call it a shark attack! I promise not to judge!
Remember to stick these guys in the fridge or freezer just to set up the white chocolate after you are finished decorating. Once the chocolate is set, you can store these in the fridge in a plastic baggie.
- 1 pear, peeled and finely chopped
- 4 egg whites
- ½ cups brown rice flour
- 3 tbs. coconut flour
- 2 scoops MRM vanilla
- 3 scoops brown rice protein
- 4 tsp. coconut sugar
- 1 tsp ginger
- 3 tbs. molasses
- ⅛ inch fresh ginger, grated
- 1 tsp vanilla
- 6 scoops stevia
- ⅛ tsp. cloves
- ¼ tsp nutmeg
- 4 tbs. applesauce
- 6 tbs. oat flour
- ¼ cups white chocolate chips, melted*
- In a large mixing bowl, combine all dry ingredients.
- Add egg whites, applesauce, molasses and chopped pear to dry ingredients. Stir to combine.
- Place in refrigerator to chill, 1 hour.
- After done chilling, preheat oven 350.
- Cut a large sheet of parchment paper and put out over countertop for rolling out dough.
- Scrape dough out of bowl and onto parchment. Allow to rest 5 minutes.
- Begin rolling out dough to desired thickness. These should be very thin to get a crispy gingerbread man.
- Once dough is to desired thickness cut another large sheet of parchment paper or flour the counter with brown rice or oat flour.
- Turn over the parchment paper with the dough and lay dough on new surface. Peel off parchment paper from rolling but don't' press into the new surface to much.
- Cut as many gingerbread men out as possible. Gather scraps and re-roll using the same method. I reused the same rapprochement paper through making my men, and had to re-roll the dough 3 times.
- Transfer gingerbread cut-outs onto a pregreased parchament lined baking sheet. Bake for 9-11 minutes.
- Take gingerbread men out of oven and transfer to a cooling rack. Allow to cool fully before decorating.
- *To decorate the gingerbread men, melt ¼ cup white chocolate
- late chips in the microwave or on the stove. It took 1 minute on 50% power to melt the chips for me.
- Stir the white chococlate to ensure everything is melted.
- Transfer melted chocolate to a plastic baggie. Cut the smallest end off the corner of the bag. This is now your piping bag!
- Pipe out the decorations you want! Be creative! Dave and I did these and he was being quite silly with his creations.
- Place in the fridge for 15-20 minutes to set your chocolates.
