Hello loves! I have a fun new pancake recipe for you. It has spiced apples in the batter and was amazing with those candied cinnamon vanilla walnuts I shared with you on Sunday! There are some times when I think it is 100% worth the time to have a extra special breakfast. Like after teaching an hour of spin or after a long run when training for a half marathon!.
Speaking of long runs, I have a confession to make, I really didn’t enjoy my long run last night. 🙁 My hip locked up around mile 5.5 and it never got better. I was running in new shoes (I got a pair of Merrell’s) and they were pretty comfortable considering it was the first time I was running in them. My old shoes were that bad that I couldn’t run another step in them – so I consider that a success. But yeah I’m not so sure about this whole half marathon mess. Maybe I just need to keep my runs to in the morning? I tend to be tight in my hips by the end of the day anyway after sitting at work (
and I can eat my face off for the rest of the day)
Any thoughts stretching or how you recovered from pain in your hips while training? I’m going to look for a yoga studio where I can take classes before work. I’m hoping it might be just what I’m looking for! Last year when I was training, I was going to yoga 3-4 days a week, and I really attribute that to what kept me injury free during my runs (even if the actual marathon wasn’t so easy).
My new goal is to run 6 miles without pain. If I can do that I will get back on the half marathon horse. Maybe if I knew I had pancakes after my run I would be more motivated to run faster not stop so much to walk and complain!
So like I promised, these pancakes are slightly sweet but packed with amazing spices of cloves, ginger, cinnamon and nutmeg (hello there gorgeous). The base of these pancakes is applesauce and oatmeal which doesn’t compete with the apple filling like the traditional protein pancake recipe would. I didn’t break the oats down, they gave the pancake a little texture which I wasn’t going to complain about. The star of these babies are ginger and clove spiced apples that are allowed to soften slightly on the stove before adding to the batter.
- ½ cup rolled oats
- ½ cup unsweeteened applesauce
- ⅓ cup almond milk
- 2 scoops pea protein powder
- 2 tbs. coconut flour
- 6 egg whites
- ½ tsp. stevia
- 1 tsp vanilla coconut sugar (optional)
- ¼ tsp ground ginger
- ⅛ tsp. ground cloves
- ¼ ground nutmeg
- 1 tsp. cinnamon
- 1 tsp. vanilla
- ½ tsp. baking powder
- 1 large fuji apple
- ¼ tsp. ground cloves
- ¼ tsp. ground ginger
- 1 tbs vanilla coconut sugar
- Make the apple filling first by peeling and chopping one large fuji apple. Over medium heat, add apple, spices and sugar. Add 1-2 tbs. water and allow to cook. Once ingredients have been stirred, start making the pancakes.
- Combine all ingredients in a large bowl and allow to rest 1 minute.
- Add apple filling and distribute evenly on a hot griddle that has been sprayed with non-stick spray (I used coconut oil). This recipe makes 5-6 6-8 inch pancakes.
- The batter will be thick and may need your help with spreading out evenly. Add to a and allow to cook 4-5 minutes on medium heat.
- Flip pancakes and allow to cook 4 additional minutes. If making the candied walnuts, be sure to start them once the pancakes have been flipped.
These babies were luxurious and not that difficult to make. I actually made a double batch of the spiced apple and added some to the top for added apple goodness. I’m not saying you have to make these this weekend, just that you should 🙂
