Mother’s Day is right around the corner. It’s this Sunday don’t forget! Just in case you need some help throwing things together and aren’t quite sure what to make, I’ve created this amazing Mother’s Day Brunch Ideas menu. This way you could prepare ahead of time so that the whole day Sunday can be focused on mom and not on making food. For brunch I like to have a mix of the breakfast items and traditional lunch items that way each guest has an option and you can mix things up a little bit.
You can’t skip out on the desserts either. We are of course celebrating mom and her day right! Don’t worry I’ll provide you some healthy dessert options that no one will feel guilty. Of course I wouldn’t recommend brunch without some cocktails. So, I’m going to share with you some light and healthy cocktail recipes that you can use your favorite wine with.
One of my favorite go to brunch items has always been quiche. You can make it ahead of time and it’s great served at room temperature. You can have brunch and have something sweet as well. This banana bread recipe can be made the day before and banana bread has always reminded me of my mom so I try to make some for her anytime we get together.
Like I said before I like to serve a variety of things at brunch so salad and soup are also on the menu. I personally love my mushroom soup it’s the best ever mushroom soup for a reason. Even though it’s getting warm outside the soup is perfect as it’s still light, has a great consistency, and the mushroom flavor is beyond belief.
A healthy salad Niçoise is a great option for brunch. It brings together breakfast and lunch because of the hard-boiled eggs and the roasted potatoes. Speaking of roast potatoes, those are a brunch must since you can make them the day before and they turn out fantastic. Just reheat in the oven for about 20 minutes the day of.
Of course I promised you dessert and I couldn’t decide what I wanted to make so I wanted to provide you a couple of things you can make in advance that are just as good the next day. Apple bundt cake. My mom and I used to make and eat this all the time when I was a kid. This healthy version is sure to bring happiness to everybody that attends brunch.
If you’re not into cake and can always make the best vegan chocolate chip cookies or strawberry brownies. Don’t worry everything is healthy no guilt here! Be sure to celebrate with mom today with nourishing food and happy memories!
