Fill your tummy with these hint of green pancakes and avoid getting pinched this St. Patrick’s Day!
St. Patrick’s Day has always meant Shamrock Shakes and other minty bright green treats. If you are anything like me, you jump at the chance to participate in St. Patrick’s Day shenanigans! But I’ve noticed that most food coloring has some crazy chemicals I don’t care to ingest (even if they are safe for consumption). So I looked around the kitchen trying to find a way to still participate in St. Patrick’s Day. Well lucky for me, I just got a huge tub of Vega One All In One Shake (affiliate link) which has 6 servings of greens and it turns my food GREEN when I add it (and it tastes great, you don’t taste the greens). I tried just using the Vega One, but discovered that although the taste was spot on, I unfortunately cooked all the green out of my pancakes.
So that lead me to keep looking around in the kitchen. Then I thought, well when I make green smoothies with spinach, I really don’t taste the spinach at all, so maybe the same thing will work with pancakes. Worth a shot right? So the next batch I added frozen spinach and viola, just enough green stayed with my pancakes to call them celebration worthy!! Oh and they are delish, you won’t even think about how healthy these are once you take your first bite!
If you are anything like Dave and I that first bite of pancake has to be smothered with peanut butter, and I highly recommend the cinnamon raisin peanut butter. It’s seriously so good on these pancakes! You’ve got to try that combo!
These pancakes come together quickly, everything goes in the blender and you’ve got batter. That’s exactly how I like to start my morning, easy peasy with a side of pancakes (and coffee, extra coffee actually!).
I like to make protein pancakes in the morning. There are a few reasons why I like to make protein pancakes vs. traditional pancakes:
- These pancakes are full of protein, which helps keep you full longer. Carbs are digested first by the body, so when you eat traditional pancakes, your body can quickly digest through the carbs and you are hungry in an hour or two. But protein can take up to twice as long to digest, so you are full longer.
- There are less carbs in these pancakes than traditional pancakes. Only 1 banana, applesauce, oats and coconut flour. These are all sources of carbs that are rich in fiber! Fiber is great for your digestion and also takes longer to breakdown in your body than the quick carbs that are found in traditional pancakes.
- I replace the fat in traditional pancakes with banana! That’s my trick to keeping these lower in calories. I like to replace the fat with nut butter on top instead!
I keep a bag of frozen spinach in the freezer at all times for smoothies, which is an inexpensive way to get spinach. You don’t have to worry about it going bad and it’s much cheaper cooked down like this!
I make my pancakes on a large electric griddle (affiliate link). It saves a ton of time and I have more room to flip pancakes. Although it kind of hinders my ability to practice flipping them in the pan without a spatula! I’ve ruined many breakfasts trying to perfect this skill lol!
Don’t make these pancakes too thick or they will take awhile to cook through. You will know the pancakes are done, when they are firm to the touch after flipping on the second side.
Don’t forget to try these with your favorite nut butter! I’m going to say it one more time, cinnamon raisin peanut butter! You’ve got to try it!
- 1 banana
- ¼ cup unsweetened applesauce
- ¼ cup rolled oats
- 2 scoops vanilla protein powder (Vega One French Vanilla)
- 6 egg whites
- 2 tbs. coconut flour
- ½ cup frozen spinach
- 1 tsp. vanilla
- 1 tsp. baking powder
- 2 packets stevia (or sweetener of choice)
- pinch salt
- Combine ingredients in a blender. Blend until fully combined.
- Preheat skillet over medium heat.
- Pour out batter making pancakes in whatever size you prefer.
- Cook 5-6 minutes on one side. Flip pancakes over and cook another 4-5 minutes.
- Serve hot with your favorite nut butter and syrup!
