Flax Carrot Apple Muffins

Flax Carrot Apple Muffins are full of protein, low fat, and gluten free. They are a great breakfast and snacking option that will make traditional flax muffins look less than appealing. These muffins are bursting with flavor and packed with added vitamins and healthy greens from the Vega One protein powder! Looking for an easy way to start your day? Maybe you are looking for a healthy, filling breakfast option but you don’t love green smoothies (gasp) and don’t have the affection for overnight oats (although, that is just too hard to believe). So what’s your option? Special K bars? Expensive fancy bars or prepackaged items?  Noooooo!!!!! Now you have healthy muffins you can make!! These are great because you can make them once and enjoy them all week!  Muffins are the ultimate to-go food!!

These muffins are not like those sugary treats you probably thought of when you heard muffins. They are filled with real fruits and hunger killing protein powder. You got that right, protein powder is baked right in and helps me keep hunger at bay.

At my last job I worked in HR for awhile, and we used to have monthly meetings where my boss would bring in these amazingly huge muffins. Literally the size of a softball. And I would nibble away during the meeting, usually finishing the whole thing even though I swore I would only eat half and Id walk out of the meeting buzzed from sugar and starving. It didn’t take me long to learn to stop eating the muffins as they weren’t doing anything for me except making me hungry and craving sugar the rest of the day.

Now I make the effort to always have easy healthy breakfast items on hand or in the freezer. I find that these muffins are a great pick me up when I hit that afternoon slump where all I want is coffee and candy.  These end up being a much healthier option and I’m not hangry. Because let’s all be honest, no one likes a hangry co-worker!

Flax Carrot Apple Muffin Recipe Tips | www.PancakeWarriors.com

These muffins are packed with carrots, apple and lots of other awesome ingredients. I added Vega One Protein powder to these muffins. I love using this in my breakfasts, since it has 20 grams of protein, 6 servings of greens, 50% of the daily value of vitamins and minerals and 25% of the daily intakes of fiber. Talk about an amazing way to start the day!

I like to use these silicone muffin liners (affiliate link) to make my muffins in. They are easy to wash and make baking so much less stressful. The batter doesn’t stick to them and they easily peel away from the muffins. If you don’t have these silicone muffin liners, you can also use parchment paper liners, which I’ve also had luck with in the past.

Flax Carrot Apple Muffins

These flax carrot apple muffins are such a healthy, easy way to start the day. Make them ahead and have a healthy breakfast all week! Vegan, gluten free, low fat!
Ingredients
  • 2 carrots grated
  • 1 large granny smith apple grated
  • ¼ cup almond meal
  • ¼ cup oat brand
  • 2 tbs. coconut flour
  • 2 tbs. ground flax
  • ½ cup unsweetened applesauce
  • ¼ cup almond milk
  • ¼ cup rolled oats
  • 1 tbs. coconut sugar
  • 2 scoops Vega One french vanilla protein powder
  • 1 tsp vanilla
  • 2 tbs. cinnamon
  • 1 tsp. baking powder
Instructions
  1. Grate carrot and apple.
  2. In a large bowl, mix together almond meal, oat brand, coconut flour, ground flax with applesauce and almond milk. Add grated carrots and apple.
  3. Add in rolled oats, coconut sugar, protein powder, vanilla and cinnamon.
  4. Stir to combine.
  5. Add optional raisins and pistachios. Add baking powder
  6. Divide between 9 muffins.
  7. Bake at 350 for 30 minutes until golden brown.

    I have to say….they don’t look that pretty…haha – but they sure do sound great! I love having breads for breakfast but they never seemed that healthy. This has tons of great stuff in it that I wouldn’t feel guilty about eating them everyday. I’m definitely pinning this!

      Coconut flour absorbs a ton of liquid. You could sub almond flour or your favorite gluten free flour. However, you will likely need to double the almond flour or gf flour of your choice. For 2 tbs. of coconut flour I would use 4-6 tbs. of the other flour. I hope this helps.
