This easy homemade marinara sauce only takes seven minutes from start to finish. It’s only got a few ingredients all of which you likely already have in your pantry and it only requires a minimal amount of cooking skills. That’s right, now you can impress your (future) in-law’s or your co-workers with a meal that tasted like you have been slaving away in the kitchen all day! Vegan, low fat, gluten free, paleo, whole30 approved!
Maybe you’ve been cooking your whole life but marinara is normally is a full day process. Well, I have a fun hack for you with this recipe! Hey it might even change your perception on store bought marinara. Ok let’s talk about that for a second. Sure there are some great brands of store bought marinara out there, but most of them unfortunately have ingredients like high fructose corn syrup, sugar and added salt. Let’s be honest, good food doesn’t need that stuff to taste good!
So this marinara sauce will be ready in the time to boil noodles. I prefer to eat zucchini noodles or zoodles or spaghetti squash. I’ve found that pasta fills me up, but then I’m hungry again rather quickly. It wasn’t uncommon for me to eat 2-3 servings of pasta before the night was over, especially if I left it out on the stove. Not only that, I was so surprised how little a serving of pasta is, have you ever measured out a serving? It’s not that big!
Instead I make zoodles or spaghetti squash and eat until I’m content. They are low calorie high fiber and full of water. If zoodles aren’t your thing try mixing half pasta and half zoodles. You will be surprised how little you notice them. This is how I started incorporating them in my diet.
Ok back to this marinara. It’s just crushed tomatoes, balsamic vinegar, onions., some optional fresh herbs and a pinch of salt. Tadaa! So easy. If you remember from my tomato avocado salad, reducing balsamic vinegar makes it just irresistibly sweet. It pairs beautifully with tomato and creates this luscious sauce in no time.
Dave likes his pasta sauce a bit thicker than I do so i simmered it for an additional 5 minutes but for me 7 minutes is the perfect consistency. Cooking healthy doesn’t have to be difficult. Make this a complete meal with some organic chickpeas that have been rinsed and drained or add some healthy sundried tomato turkey meatballs or vegetarian meatballs to make this a complete meal!
In this recipe I used 2 containers of Cirio Crushed Tomatoes in a box. I have tried to move away from using canned tomatoes, after learning that these BPA found in cans with acidic foods Ilike tomatoes) can allow the BPA chemical to be leached out into the food. This can be avoided if you buy crushed tomatoes from the tetra-pack’s like these are sold in. I used two 12.7 ounce containers of tomato in this recipe.Homemade marinara in 7 minutes! - 1-2 tsp. coconut oil
- 1 small sweet white onion, chopped
- 2 tbs. balsamic vinegar
- 2 containers crushed tomatoes
- 1 tsp chopped rosemary (optional)
- 3-4 sprigs fresh thyme (optional)
- ½ tsp. salt
- black pepper to taste
- Preheat a medium or large skillet over medium heat. Add coconut oil or spray with coconut oil non-stick spray. Add onions and cook 1 minute.
- After 1 minute add balsamic vinegar and cook 2 minutes.
- Add tomato sauce, chopped rosemary and thyme and stir until balsamic onions are incorporated. Let cook 4 minutes.
- Serve when sauce reaches consistency you like. Dave prefers the sauce to simmer 5 additional minutes
